A character may practice the same craft as both, a paid Profession and an unpaid Hobby, at once, they're distinguished only by whether coin changes hands. See Hobbies, Basic Rules pg. 2.

How Professions Work
Skills are craftsmanship-based actions tied to a chosen Profession, creating items, gathering resources, and performing tasks that require knowledge, tools, recipes, and a suitable work area. Opening a Profession's current Proficiency Tier and raising an individual skill inside it are two separate purchases, same as Talents. Crafting resolves as d100 + Skill Score + Attribute Modifier vs. a Difficulty Score (DIFS) set by the GM. See Skills (TST) and Crafting Resolution, Basic Rules pg. 2.

Note
"As Hobby" marks whether this craft has a recognized unpaid Hobby counterpart already named in the Hobbies list (Basic Rules pg. 2). Where none is separately named, the Profession itself can still always be practiced unpaid, on the side, for no coin, per the general Hobbies rule, marked "Same craft, unpaid" below.
